I had never experienced the delightfulness that is a Chocolate Scotcheroo until this week. I attended a baby shower and one of the guests brought them. I never do this, but had to ask for the recipe to make them at home! They are a variation of the Rice Krispie Treat, which normally I don’t like. I fell in love with these though!
I promised my husband I would make them right away. I planned to take photos of the process, but my husband was so anxious to try them that we had to make them fast, so no pictures this time. The recipe could not be easier! No baking involved! You really have to make these, seriously yum.
There are recipes all over Pinterest and the internet for these, but here’s the recipe I followed, provided by my friend.
Chocolate Scotcheroos
1 cup granulated sugar
1 cup light Karo syrup
1 cup peanut butter
6 cups rice krispie cereal
6 ounces semisweet chocolate chips
6 ounces butterscotch
Directions
1. Spray Pam in a 9 x 13 inch pan
2. In a saucepan, combine sugar and Karo syrup and bring to a boil
3. Remove from heat and stir in peanut butter
4. Mix in cereal until coated. Press the mixture into pan
5. Melt the chocolate and butterscotch chips in microwave, stirring occasionally
6. Spread over top of bars.
7. Refrigerate until set. Then cut into bars
